how to wake a sleepy kitty

dsc_3973

Oh what I would give to be a kitty. Sophie has (what she thinks is) her own bed and sleeps on it all day long. What a life, right? Just lay in bed and sleep all day long? Except, of course, when I’m sleeping.

She loves waking me up, “ARE YOU ASLEEP? OK, I WAS JUST CHECKING IF YOU WERE ASLEEP.” Every once in a while I just have to go in and jump on the bed, just as payback for waking us up in the middle of the night. Last night alone she kept me up from 2am – 5am because my arm wasn’t in the proper position for snuggling.

I know one way to wake me up – the sweet smell of something baking away in the oven. So I tried this one on Sophie, too. I mean, who can resist the sweet scent of cinnamon filling the air? Especially in the fall. I know it’s fall now, I saw it in Ohio. Does not look the same here in Phoenix, but in Ohio I saw the fall.

I think a cinnamon chip scone and espresso would make a splendid Autumn morning breakfast.

One confession – yours should not look like this. Unless you, like me, spent days hours trying to find cinnamon chips and then realized you forgot to put them in your scones which resulted in you frantically smooshing them into the scone dough… just sayin. Yours can and will be much prettier than these. I have faith in you 🙂

Sophie did not want cinnamon scones for breakfast, she just looked at me like I was stupid and went back to bed. What a turd. So while scones are a good people waker upper, turns out sneaking into the room and pouncing on the bed is still the best way to wake a sleepy kitty.

Cinnamon Chip Scones

Scones

  • 3 cups AP flour
  • ⅓ cup sugar
  • 5 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • 2 sticks (1 Cup) butter, unsalted
  • ¾ cup heavy cream
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup cinnamon chips

Topping

  • ½ cup sugar
  • 1 teaspoon ground cinnamon
  • 1-½ teaspoon heavy cream
  1. Preheat oven to 350F; line a baking sheet with parchment.
  2. In the bowl of a food processor, mix together flour, 1/3 cup sugar, 1/2 teaspoon ground cinnamon, and baking powder. Cut butter into pieces, then pulse into dry ingredients until mixture resembles coarse crumbs.
  3. Transfer to bowl and stir in cinnamon chips.
  4. In a small bowl, mix together cream, egg, and vanilla extract. Pour into flour mixture, stirring to combine. Mixture will be shaggy/crumbly.
  5. Turn onto work surface and gently press together on the sides as you flatten (or roll, with a rolling pin) the top, forming into a large circle or rectangle ( I did circle, but vote rectangle for next time). In a little bowl, mix together topping ingredients and sprinkle over the top of the dough, lightly pressing into the top.
  6. Cut into wedges (from a circle) or triangles (from a rectangle); don’t cut them too big (like I did). Scones are best enjoyed in smaller packages…
  7. Transfer to prepared baking sheet and bake for 20 to 25 minutes @ 350F.
