We’ve finally reached triple digits here and today they even graced us with the courtesy of an “excessive heat warning” as of 10:00 AM. This warning is technically scheduled until 8:00 PM tonight, but we know better than that. This warning will be renewed daily probably until the middle of September. Yay.

Try as I might, I have not been able to successfully devise a way for FH and I to find an alternate summer residence, where we could work remotely from somewhere that does not feel like the surface of the sun.

Until such a day exists (or until the end of the summer) I am likely to crave all things cold and vegetable-laden. Something about it being a million degrees out makes me want to stay inside and eat cold, crunchy veggies all day every day. Enter this salad.

Crisp romaine lettuce, crunchy chickpeas, and creamy pesto parmesan dressing. What more could a girl ask for?

This salad is from Pinch of Yum‘s latest cookbook Everyday Healthy. This e-cookbook is full of quick and healthy recipes and even comes with a nutrition guide (with substitution recommendations) and a meal planning guide.

I modified the recipe a bit by tossing my chickpeas in olive oil before roasting them (I like the crunch it gives them), upping the pesto in the dressing (call me a basil-holic if you will), halving the amount of tomatoes called for (they are not my favorite), and adding cucumbers. Because cucumbers make everything better.

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 30 minutes

Yield: 4 to 6 servings

Ingredients

    For the salad
  • 1 14-oz can of chickpeas
  • 2 Tablespoons olive oil
  • 8 slices bacon, cooked
  • 2 medium tomatoes, rinsed
  • 1/2 seedless cucumber, rinsed
  • 4 cups romaine lettuce, washed and chopped
  • Salt & Pepper, to taste
  • For the dressing
  • 1/3 cup sour cream
  • 1/4 cup parmesan cheese, finely grated
  • 5 Tablespoons water
  • 3 Tablespoons parsley
  • 2 Tablespoons pesto
  • 1 teaspoon minced garlic
  • 1/2 teaspoon fresh lemon juice
  • Salt & pepper, to taste

Instructions

  1. Preheat oven to 400?F. Line baking sheet with parchment. Drain, rinse, and dry chickpeas.
  2. Toss chickpeas with olive oil and spread on baking sheet. Season generously with salt and pepper. Bake 20 to 30 minutes until crisp, tossing halfway through. Set aside to cool.
  3. Meanwhile, dice tomatoes, cucumber, and bacon to desired size. Toss together with lettuce and set aside.
  4. In a food processor, combine sour cream, pesto, parsley, garlic, parmesan and lemon juice until combined. Stream in water one tablespoon at a time until desired consistency is reached. Add salt and pepper to taste.
  5. Serve salad in bowls and top with chickpeas and desired amount of dressing.

Notes

* Experiment by tossing your chickpeas with other seasonings like smoked paprika and cumin or even with parmesan cheese.

* Will easily serve 4 as a main salad or 6 as a side salad.

* Add more or less pesto to your taste.

With the Super Bowl coming up, I’ve already shared a couple of snacks with you, but here’s one I really love.  Not only is it the easiest thing in the world to make, and you can make it with ingredients that you most likely have in your house right now, but it is packed with flavor.

Or should I “loaded” with flavor?  (Sorry, I couldn’t help myself)

All you do is take all the stuff you would normally put on a baked potato: bacon, cheese, sour cream, etc… and put it into a bowl instead!  Stir it up and let it sit so the flavors can “mingle”, and then serve it up, on top of potatoes!

Well, potato chips.  Same thing.

If you’re worried about your waistline, or still hanging onto some shred of your New Year’s Resolution, do what I did and use reduced-fat sour cream and turkey bacon.  No one will ever know, unless you tell everyone about it on your blog later.

Well, since you’re saving all those calories, you might as well double the recipe.

Loaded Baked Potato Dip

[ Printable Recipe ]

  • ½ cup sour cream (use reduced-fat if you feel guilty)
  • ½ cup extra-sharp cheddar cheese, shredded
  • 5 slices bacon or good turkey bacon, cooked and crumbled
  • 1 teaspoon dried chives (because that’s what I keep in my pantry) or 1 Tablespoon fresh
  • ⅛ teaspoon garlic powder
  • ½ teaspoon salt
  • ⅛ teaspoon (1 pinch) ground pepper

Stir everything else together, then sprinkle your extras on top and cover with plastic wrap.  Place in the fridge for at least one hour or up to one week prior to serving.

Garnish with extra shredded cheese, crumbled bacon, and chives if you’re feelin’ fancy.

Serve with your favorite potato chips (or baked kettle chips!)

Dip can be stored in an airtight container in the refrigerator for up to 1 week.

Burgers are a relatively common dinner in our home. They can be plain or dressed up, beef or turkey, with or without cheese, on brioche or Sarah Lee. How does one eat burgers frequently without becoming bored, you ask?

Toppings!

Burgers are so easy to customize to whatever you happen to be craving. There are so many ways to spice up a burger, I could probably eat burgers every day and never get make the same one twice. Of course, I have a few favorites that tend to get stuck on repeat… but I *COULD* make a different one every day… if I really wanted to…

These, my friends, are dressed up with bacon, red onion, chipotle spread, cheddar cheese, and greens. I suppose jalapeno jack would be just as tasty on top – but we “had” to buy a(nother) two-pound brick of cheddar from Costco, so it’s been the “cheese of choice” as of late. 🙂

So if you’re looking for a way to “spice” up your usual burgers – give these ones a try!

Chipotle Bacon Burgers

[ Printable Recipe ]

  • 1 pound lean ground beef
  • dash of Worcestershire sauce (about 2 – 3 shakes)
  • 1/2 teaspoon chipotle powder (optional)
  • salt and pepper to taste
  • Chipotle Spread
    • 1 cup mayo
    • 1-2 chipotle pepper(s) in adobo, finely minced
    • 2 cloves garlic
    • 1/2 teaspoon lemon or lime juice
    • salt and pepper to taste
  • Bacon, cooked
  • Red onions (grilled or not, your choice)
  • Greens of choice (spring mix, romaine, iceberg, arugula…)
  • Cheese – I recommend Cheddar or Pepper Jack
  • Burger buns

Mix beef, salt, pepper, Worcestershire, and chipotle powder in a bowl until incorporated. Form into patties, salt the outside of the patties as well.

Make Chipotle Spread by mixing mayo, chipotle, garlic, salt, pepper, and lemon juice in a small bowl. Set aside until ready to use.

When ready to make the burgers – grill patties to desired doneness and top with cheese to melt. While resting, spread a light layer of chipotle spread over the buns and grill until toasted. Assemble burgers, adding additional chipotle spread if desired, and enjoy!
